Pav Bhaji

About the Dish

Pav Bhaji is a bold and flavorful Mumbai street-food classic made with mashed vegetables cooked in aromatic spices and served with buttery toasted pav. It’s mouth-watering, comforting, and perfect for family dinners or casual gatherings. 

Ingredients

For the Bhaji 

2 tbsp Nova Butter 

1 tbsp Nova Dairy Cow Ghee 

2 cups boiled and mashed potatoes 

1 cup boiled cauliflower 

½ cup boiled green peas 

1 cup finely chopped onions 

1 cup chopped tomatoes 

1 chopped capsicum 

1½ tbsp pav bhaji masala 

1 tsp red chilli powder 

½ tsp turmeric powder 

Salt to taste 

2 tbsp chopped fresh coriander 

½ lemon 

For the Pav 

8 pav buns 

2–3 tbsp Nova Dairy Butter for toasting

Method 

Step 1

Heat Nova Butter and Nova Dairy Cow Ghee on a flat tawa or deep pan. Add chopped onions and sauté until soft and translucent. 

Step 2

Add capsicum and cook for 2–3 minutes. Stir in tomatoes, turmeric, red chilli powder, and salt. Cook until the tomatoes soften and release oil. 

Step 3

Add boiled vegetables and pav bhaji masala. Mash everything together using a masher while cooking on medium heat. Add a little water to adjust consistency and simmer for 8–10 minutes until thick and well blended. 

Step 4

Finish with a knob of Nova Butter, fresh coriander, and a squeeze of lemon juice. Mix well and keep warm. 

Step 5:

Slice the pav horizontally and toast them on a hot tawa with Nova Dairy Butter until golden and crisp on the edges. Serve hot with bhaji.

Serving Suggestions

Serve hot with chopped onions, lemon wedges, and extra butter on top. 

Ideal for dinner, weekend meals, or festive get-togethers. 

Leftover bhaji can be refrigerated for up to 2 days and reheated before serving
